Here's a thought:

Methos knows that money is pretty transitory. You can save up for a couple of centuries and get really wealthy if you know what you're doing and have good luck. But if you're living through millenia, you're pretty much guaranteed to lose all your wealth pretty regularly: when you have to move suddenly, when banks crash, when governments crumble, when mongols invade, etc. So what is the best way to invest your funds? It's spending the money to generally improve the world around him. So he's constantly funding start-up breweries and bars, and making sure that the recipes he likes best will be available as widely as possible so he can get it where ever he goes. And within beer-tasting circles, there're stories of the semi-mythical beer-fairy-godfather who clandestinely helps beer halls. Hee.
