Methos falls for the Goblin King (considering his history with Byron and Kronos and even Duncan to an extent, demanding and high maintenance men are definitely his type), Jareth still wants Sarah to prove he won after all, and Sarah wants someone who is unusual enough to be interesting but still able to pass for a nice young man, ie. Methos.
